Surati Khaman Recipe - सुरती खमन


We prepare for 4 to 5 person so adjust quantity of chana daal according to your requirement. 
Normally per person 1 cup is enough. But 1 cup is not enough to make 1 plate of khaman, so start with 2 min.

Let's start with Khaman :) Recipe:

4-5 cups of split Chickpeas lentils (For 4-5 Person)(Chana dal)
(Take at least 2 cups, less than that will not be enough to make khaman)

Wash Spit chickpeas lentils (Chana dal),  let it be soaked for 5-6 hours
check after 5-6 hours that chana dal is soaked properly or not by splitting it by hand. If not then let it soaks more.

                                   
Take a little by little dal into mixer bowl to blend it and use the same water which we used to soak the dal. if your mixer is able to take one cup at a time then for 1 cup add 1 tbsp. curd (Yogurt).

Now blend it well, don't add much water, add little by little only to run mixer smooth.

Consistency of batter should look like this. Do the same for the rest of Dal.

Take it into the vessel.

Now cover the vessel and put it into a warm place for fermentation for overnight.
Next day check if batter's fermentation.

batter size is almost double that is a good sign for fermentation.

After fermentation, It should look like this.
  
                                      
Take Ginger and spicy green chillies and make a paste from it.

Now add salt as per taste, 
4 tbsp. Ginger chilli paste approx. 
2 tbsp. turmeric Powder
2 tbsp. Asaphotedia
and approx. half a cup of water.  (add less if your khaman batter is less than mine)

Mix batter well.

It should look like this.

Now take a vessel and add water and salt to it and let it be hot.
 You can also do start this simultaneously while mixing the batter.

Take a plate and put oil on the surface. And we will prepare batter which goes to the plate.
From batter, mixer takes the batter in a separate vessel. For us, we cook a total of 4 plates of Khaman. so we did this process 4 times.        
                                    
Add 1 small tbsp. soda
  
                                          
Add 1/3 cup of water (less than half cup)  and mix it well.

Pour batter into the already prepared dish with oil. 
Put dish to the vessel when water is hot.
Cover the vessel and let it cook for 20 - 25 min. 

Check after 20-25 min, the batter shall be double in size and not liquidy any more.
Take out the plate and let it be cool for another 8-9 min.


Once the dish is cool then make small pieces from it and take it into the separate vessels and do the same for the rest of the batter. (Take it into a separate bowl add soda and water and then put it to cook for 20-25 min.)

Now time to do the tempering.
            Ingredients:
For tempering:
9-10 tbsp. Oil
4-5 tbsp. Red dry chillies
3 tbsp. Mustard Seeds
3 tbsp. Cumin seeds
Nice to have:
3-4 green hot chillies
7-8 curry leaves
1 tbsp. sesame seeds
(Adjust all quantity according to you, I prepared almost 4 dishes of Khaman)

If you want to make sweet tempering
1/3 cup water
2 tbsp. sugar

               Method:

Step 1: Take an Oil in a vessel and let it be hot
Step 2: Once the oil is hot then add mustard seeds, cumin seeds and red dry chillies. (you can also add green chillies, curry leaves and sesame seeds if you have)
Step 3: let it fry for 20 to 25 seconds.
Step 4. Sprinkle on your khaman and mix them well after sprinkle.
---------------This is optional for making sweet tempering-------------------------
Step 1: Take water and mix sugar in it.
Step 2: add this sugar water into the emerging which we prepare before, and then sprinkle on khaman. (You have to add sugar water after frying the other ingredients for 20 to 25 seconds.)

That's it. Serve hot with tea or Green chutney as per your choice.
