Carrot halwa

Gajar ka halwa, also known as gajorer halua, Gajrela, Gajar Pak, and Carrot halwa is a carrot-based sweet dessert pudding from the Indian subcontinent. It is made by placing grated carrots in a pot containing a specific amount of water, milk and sugar and then cooking while stirring regularly.

----------Ingredients---------- 2kg Carrots 2-3 tbsp Ghee 300 gm Sugar 2 cup Milk 3-4 tbsp Cream (Sahne) 1 /2 tsp Cardamom powder 1/2 cup Almonds (Chopped) 1/2 cup Cashew nuts (Chopped) -------------Instructions---------------- - Wash, peel and grate the carrots. - Boiled Carrots for 10-15 min (or until 1 whistle) in the pressure cooker - wait until the air from cooker comes out - Take vessel to cook Carrot, put it on medium-high flame - Add 2cups of milk - Keep stirring until milk mix well with Carrot and mixer become almost dry - Then add Milk cream or Sahne (Mawa if you have) - Keep stirring and mix well, meantime prepare ghee tadka. ------------Ghee (Clarified butter Tadka)-------------- -For Ghee-tadka take a pan and put it on the stove - Once the ghee is warm add Chopped cashew nuts, almond powder and cardamom powder. Mix them well and fry until cashew turns to the golden brown in colour. ----------------------------------------------------------------------------------------------------------------------- - Now add this Tadka to the Carrot Mixer and mix well for another 5-6 min. - Check the bottom of the vessel, if it is somewhat dry then it is time to add Sugar. - Add 2 cups of sugar (adjust according to your taste) - Keep stirring until it becomes dry again and sugar got mix very well. - In the end add a pinch of salt, which help halwa to maintain its flavour and taste for a long period of time. ----------------------------------------------------------------------------------------------------------------------- Note: Do not add sugar before, add it in the end only, otherwise your carrot will not cook properly.
