Ingredients:

2 cups chopped carrots
1.5 cups all-purpose flour
1 cup sugar or adjust according to your taste
4 eggs
1/2 cup Oil
1 cup walnuts
1 cup rosinen/sultaninen
1 tbsp. Vanila sugar
1 tbsp. Cineman powder
1 tbsp. baking powder
1/2 tbsp. baking soda
Method:
- Preheat oven at 180 to 200°C in up and down direction
- Take a bowl to add eggs + sugar +oil

- Mix them well until sugar melt with eggs and oil.
- Add chopped carrots and mix well.
- With the help of strainer add All purpose flour + cineman powder + baking soda + baking powder + vanila sugar to the mixture of egg, oil and sugar.
- Mix them well until no lumps remain in the flour
- Now add walnuts and rosinen/sultaninen
- mix well again.
- Take a vessel for preparing the cake, I have used 8x4 inch pan for baking cake.
- Now cover with back paper and add the mixture of cake to it.
- Now put it into the preheated oven.
- First 10 min at the down direction.
- Then next 15 min Up and Down direction
- and then 10 min Up direction if needed.
- check with using a knife or toothpick that your cake is ready or not.
- If not then let it cook until a knife comes out clear from cake for up and down direction.
- Normal timing needed is approx. 35 to 40 min.
once the cake is done let it be cool little and then remove the back paper so the bottom portion gets air and become soft too. otherwise because of hot air water will start to form and it becomes moist.
