2 Bitter Gourd (Karela)
1 chopped onion
1 chopped tomato
1 chopped potatoes
1/2 tbsp. Ginger garlic paste
1/2 cup Jaggry-Tamarind water
4-5 tbsp. Oil
1/2 cup water

1 tbsp. Cumin and mustard seeds
1 tbsp. Red chilli powder
Salt as per taste
1 tbsp. Cumin powder
1/2 tbsp. Turmeric powder
1/2 tbsp. Garam Masala
1/2 tbsp. Asafoetida

Pre-preparation:
- Clean the bitter gourd from inside and remove the seeds from it
- Cut bitter gourd (Karela) into the ring shape
- Now to remove the bitter taste of karela take pressure cooker and boiled it until 1 whistle come
- Let the depressurise cooker and remove water from it.
- Take a pan and add 4-5 tbsp. Oil
- Once the oil is hot then add cumin and mustard seeds to it
- Add Asafoetida
- Add chopped onions and let it fry until onions turn into golden brown colour
- Then add Potato slice and let it cook until potatoes cooked well.
- Add tomatoes and dry spices (chilli powder, Cumin powder, turmeric powder, Garam masala)
- Let it cook for 4-5 min.
- Meanwhile, take a pan to add 3 tbsp. oil and once oil is hot then add boiled karela to it.
- Cooked it for 3-4 min until karela has golden brown spots on it.
- Now add this to the curry
- Add Tamarind and Jaggery water
- add more half cup water to make some gravy
- Cook it for another 4-5 min
- Curry is ready to serve
Serve with Chapati, naan or bread.
